My Gluten Free Journey…

Varouj-0085-1A few years ago I found out I was gluten sensitive. I owned a bakery then! The very first sentences I uttered was I CAN”T LIVE WITHOUT BREAD, I CAN’T STOP EATING PASTA, I LOVE MY MORNING CROISSANT!I live on all that! Sound familiar? To top it off, that was my livelihood!

I know firsthand how it feels when you find yourself having to make a drastic shift in your diet overnight and you don’t even know where to start, especially when your diet consisted of gluten-full foods and you are surrounded with gluten and wheat based products, not to mention all the products that have hidden gluten in them.

Like many of you, I wasn’t sold on the idea of gluten being the cause of my symptoms; however I was willing to try it. After few trials, it was inevitable! I had to change my eating habits. What’s very interesting though is how once you cleaned your system of gluten and are no longer dependent on it or addicted to it, you hardly miss it.

As a certified gluten practitioner I will help you transition and sustain a gluten-free lifestyle, so you have more energy, lose and maintain your ideal weight, repair the damages caused by years of gluten consumption, feel and look younger and dish up nourishing gluten-free, dairy-free and sugar-free meals in 30 minutes or less your whole family would love and not feel deprived.

And how would my culinary background in classical cuisine, baking, pastries and business operations help you in your new “healthy” quest?

It’s simple! I know how what’s perceived as “real food” taste like. I’ve learned from the best, I invested years of my life learning from the best chefs, and countless hours reformulating recipes so I can offer the best I can offer to my patron. Gluten free foods are no different! I compare my recipes to the “classics”. I don’t believe you and I should settle for the second best simply because we have to live gluten-free, dairy-free or sugar-free lifestyle. Who says you have to give up on your favorite family recipes, or stop making that traditional Christmas cookie your family loves!

For the past several years I have been researching, learning, developing and teaching alongside healthcare professionals detoxifying foods, gluten free, sugar free and dairy free cooking. I made it my goal to share with you the knowledge I have gained throughout the years working as a “classic” professional chef, baker and pastry chef training and teaching others how to cook, eat and live gluten-free lifestyle, and the countless hours of research and development, and the hundreds of GF recipes tested and experimented with. All this so you don’t have to. You, your family and your temple of your soul deserve the best!

I still live with the same rules and promise; everyday is a learning day. I consider myself a life-long student of the culinary world. I love learning and perfecting every aspect of the industry, from savory to sweet, from creating new recipes or improving and/or modifying existing ones, with the emphasis on making all the changes unnoticeable.

Well, I still live with the same rules and promise; everyday is a learning day. I consider myself a life-long student of the culinary world. I love learning and perfecting every aspect of the industry, from savory to sweet, from creating new recipes or improving and/or modifying existing ones, with the emphasis on making all the changes unnoticeable.

For the past two years I have been researching, learning, developing and teaching healthier cooking.  Alongside healthcare professionals, I’ve immersed myself in everything from detoxifying food, gluten free, sugar free and dairy free cooking to name just a few.

Most importantly, I know how it feels when you find yourself having to change your diet overnight and you don’t even know where to start. Whether it’s for a short few weeks, or a lifetime change.  I have experienced all of the diets described earlier. I know firsthand, it is not easy. And I am a chef!

See, not too long ago I found out I was sensitive to gluten. (That’s how I’m putting it anyways.) Needless to say, I had to change my eating habits.  If you know anything about me, you would know that I lived on gluten!  Pizza, pasta, pastries, freshly baked croissants and breads were a must on daily basis. (I still crave a great baguette or a buttery, crispy croissant, or a great pizza.)

Luckily, I already had a substantial amount of knowledge about gluten free cooking. I had tested and experimented with recipes and even developed my own for (just for the sake of the challenge) and for the entrepreneurial curiosity. (Little did I know I was ultimately doing this for me.)

I made it my goal to share with you the knowledge I have gained throughout the years working as a professional chef, training and teaching others, and the countless hours of research and development. All this so you don’t have to. I hope to make your life easier and your meals enjoyable.
